It’s said to have been created in Shiraz in Persia. This territory is currently known as Iran. And it is said to have been made as far back as 400 BC. It was, of course, simpler back then – consisting only of vermicelli noodles, rose water, and semi-frozen sugar syrup.
The present form of falooda was developed in the Mughal Empire and spread with its conquests. The Persianate rulers who succeeded from the Mughals patronized the dessert with their own adaptations, specifically in Hyderabad Deccan and the Carnatic areas of present-day India.

This dessert is now a major part of Indian cuisine, served on weddings and other occasions. It is also a well known part of Pakistani, Bangladeshi and Sri Lankan culture.
Over the years, there have been many variations of falooda developed. Some have kulfi added or different flavors of syrup. Some come without the vermicelli noodles or include blended fruits or nuts. There are even varieties of falooda served as milkshakes.

Falooda is popular in many countries around the world. Each location gives its own flavors and changes to the original falooda recipe.

Rabri falooda is popular in northern India. This option uses rabri (which consists of milk, sugar, and powdered cardamom). Sometimes mango is added to the rabri falooda, which is a delicious dessert often served at weddings.
Bangladeshi falooda includes sago pearls, pistachios, creamed coconut, vermicelli, mango, and pandan extract. It is very popular in the southern part of Bangladesh. This variety can also include black tea, which gives it a distinctive flavor.
Pakistan makes an original falooda that uses sweet syrup, khoya, and vermicelli, but can include nuts, jelly, rose water, pakola, or other original flavors.
Andrea is another type of falooda that is made with tapioca pearls, rose syrup, and creamy milk. Iraq carries a drink close to falooda that uses thicker noodles. Kulfi falooda mixes, kulfi and sabja seeds into the falooda.
